Taste: Dry, structured, and harmonious, with a lively acidity that balances the richness of the body. On the palate, hints of peach, apricot, citrus, honey, and a slight minerality emerge, accompanied by a creamy effervescence and a persistent finish with notes of hazelnut and sweet spices
Serving temperature: 8-10°C
Pairings: Ideal with gourmet dishes such as Mediterranean sea bass with new potatoes and zucchini flowers, scampi ravioli, foie gras, or pan-seared scallops with citrus butter and royal kombu
Terroir: The grapes come from 19 villages, mainly Aÿ and Verzenay for the Pinot Noir, and Avize, Chouilly, and Mesnil-sur-Oger for the Chardonnay, with a predominance of Grands Crus (79%) and Premiers Crus (21%)
Vinification: Fermentation entirely in oak barrels over 20 years old, followed by aging on the lees for over 6 years. Disgorgement was performed manually, with a dosage of 8 g/l

We do everything possible to process orders quickly and unfortunately cannot make updates once an order has been placed. Such changes include removing or adding products and/or changing the delivery address.
