Nose: Elegant and complex, with notes of ripe red fruits such as cherries and blackberries, accompanied by spicy hints of black pepper, touches of Mediterranean herbs, and a slight nuance of tobacco and leather.
Palate: Structured and enveloping, it features velvety and well-integrated tannins. On the palate, flavors of dried plums, dark chocolate, and a vein of minerality emerge, adding depth. Long and persistent finish, with a pleasant balsamic and spicy note.
Alcohol content: 15.5%
Serving temperature: 16-18°C
Pairings: Pairs perfectly with grilled red meat dishes, braised meats, game, and aged cheeses. Also excellent with robust pasta dishes with meat ragù and traditional dishes of Apulian cuisine.
Terroir: The vines grow on clay and limestone soils typical of the Manduria area, characterized by a hot and dry climate that favors sugar concentration and a balance between tannins and acidity. The deep roots of the vines find nourishment in the geological characteristics of the soil, contributing to the wine's minerality and complexity.
Vinification: Manual harvest with careful selection of the bunches. Fermentation with indigenous yeasts and long maceration on the skins for optimal extraction of color and tannins. Aging takes place in French oak barriques for about 12 months, followed by a period of resting in the bottle.
