Origin: Barberino Val d’Elsa, Tuscany, Italy
Grape variety: 100% Cabernet Sauvignon
Color: Intense ruby red, with slight garnet hues that become more pronounced with aging
Bouquet: Complex and deep, with aromas of black fruits such as blackberry and plum, accompanied by notes of tobacco, leather, and spices, and faint hints of graphite that recall the minerality of the soil
Taste: On the palate it is dry, full-bodied, and intense, with well-structured and ripe tannins. The freshness balances the concentration and power of the wine, offering a long and persistent finish with an aftertaste of dark chocolate, licorice, and hints of toasted wood
Alcohol content: 14.5%
Serving temperature: 16-18°C
Pairings: Ideal with grilled red meats, important roasts, game, truffle-based dishes, and aged cheeses. Excellent with braised meats and stews, it also pairs well with international dishes such as Beef Wellington or ribeye with red wine sauce.
Terroir: This Cabernet Sauvignon is grown on the hilly lands of Barberino Val d’Elsa, characterized by calcareous and clayey soils, typical of the Chianti Classico area. The vineyards are located at an altitude that favors an optimal microclimate for cultivation, with warm days and cool nights, contributing to a slow and gradual ripening of the grapes.
Vinification: The harvest is manual, with a rigorous selection of the best grapes. Fermentation takes place in stainless steel at a controlled temperature, followed by aging in French oak barriques for about 18 months. Subsequently, the wine rests in the bottle for several months before being released onto the market, in order to reach the right balance.
