Nose: Intense and complex, with predominant notes of ripe red fruit, such as black cherry and blackberry, accompanied by hints of sweet spices, licorice, and delicate nuances of cocoa and vanilla.
Palate: Warm, enveloping, and well-structured on the palate, with soft, well-integrated tannins that provide excellent persistence. The taste is rich in ripe red fruits, with a spicy aftertaste and a slight toasted note, due to aging in wood, which lends depth and complexity. The wine maintains good freshness that balances the intensity of its structure.
Serving temperature: 16-18° C
Pairings: Perfect for accompanying grilled red meats, roasts, game, aged cheeses, and Mediterranean dishes with savory sauces. Also excellent with braised meats and stews, where the wine completes and enriches the complex flavors of the dishes.
Terroir: The Primitivo vines grow on clayey and calcareous soils of the Salento region, which give the wine minerality and robustness. The hot and sunny climate of Salento, combined with cool sea breezes, favors optimal ripening of the grapes, enhancing the sugar content and aromatic intensity.
Vinification: The grapes are harvested by hand, carefully selected, and vinified in a traditional manner. Fermentation takes place in steel, followed by aging in oak barrels for about 12 months to round out the tannins and enrich the wine's aromatic bouquet.
