Nose: Rich and complex, characterized by notes of ripe fruit such as plum and black cherry, with nuances of sweet spices, tobacco, and a light earthy note typical of Aglianico.
Palate: Dry, structured, and round, with well-defined yet soft tannins. On the palate, it offers a balance between acidity and warmth, with flavors of wild berries and cherries that integrate with spicy notes and a light touch of vanilla and cocoa derived from aging in wood.
Alcohol content: 13.5%
Serving temperature: 16/18° C
Pairings: Ideal with grilled red meats, roast lamb, braised meats, and game dishes. Excellent with aged cheeses and venison; it also pairs well with pasta dishes with robust and flavorful sauces.
Terroir: The vineyards extend over the clay and limestone soils of Molise, a region with a Mediterranean climate and temperature fluctuations that allow for a slow and gradual ripening of the grapes, giving the wine a deep and complex character.
Vinification: The grapes are harvested by hand and vinified separately, with temperature-controlled fermentation and prolonged maceration to best extract the aromatic and structural characteristics of the grape varieties. This is followed by 18 months of aging in oak barrels, which softens the tannins and enriches the wine's aromatic profile.
