Origin: Midleton, County Cork, Ireland – produced by Irish Distillers at the Midleton Distillery, home of the traditional Single Pot Still Irish Whiskey.

Raw materials: Malted and unmalted barley in proportions typical of the Irish tradition; pure spring water.

Color: Deep amber with golden reflections.

Nose: Complex and enveloping, with aromas of tropical fruit, candied citrus, vanilla, honey, fine spices, and elegant oak.

Taste: Rich and velvety, with sweetness of ripe fruit, honey, and caramel, balanced by warm spices, walnuts, and toasted notes. Long, creamy, and persistent finish.

Alcohol content: 46% ABV

Serving temperature: 16–18 °C

Pairings: Perfect with dark chocolate, truffle desserts, aged cheeses, spiced cakes, or simply to be enjoyed on its own as a meditation whiskey.

Terroir: Humid and temperate climate of the Cork region, ideal for slow and refined barrel aging.

Production: Redbreast 21 Year Old is born from careful and slow production at the historic Midleton Distillery in Cork, where malted and unmalted barley are combined in a traditional mash, triple-distilled in imposing copper pot stills, and patiently left to mature for over twenty years in a masterful mix of first-fill ex-bourbon and Oloroso sherry casks, until it reaches a balance of complexity and silkiness that best embodies the authentic Irish single pot still style.

Description: Redbreast 21 Year Old is the emblem of the Irish Pot Still craft: with 21 years of maturation in bourbon and sherry casks, it releases tropical fragrances, dried fruit, and dehydrated fruit. On the palate, it seduces with vanilla, subtle spices, and a creamy texture; the finish is infinite, with a hint of barley that recalls its roots. Awarded "World’s Best Single Pot Still" in 2024, it is perhaps the best Irish whiskey many enthusiasts have ever tasted. Perfect for those seeking elegance, depth, and history distilled in a single glass.

Philosophy: Integrated / Traditional production, with great artisanal attention to historic single pot still techniques; if a category is preferred, you could insert it under 'heroic viticulture' only as a poetic analogy, but technically it does not correspond.
