Bouquet: Elegant and intense, with notes of ripe red fruit such as cherry and blackberry, followed by spicy nuances of black pepper and tobacco, as well as slight hints of vanilla and chocolate from the aging process.
Taste: Full-bodied and enveloping, with soft, silky tannins that provide structure. On the palate, flavors of wild berries and spices are perceived, blending with a pleasant freshness and a light balsamic note. Balanced and persistent, the aftertaste leaves traces of licorice and cocoa.

Serving temperature: 16-18°C
Pairings: Perfect with grilled red meats, roasts, game, and savory dishes like lasagna with meat sauce or aged cheeses. Also excellent with Mediterranean cuisine, particularly eggplant parmigiana and meat stews.
Terroir: Cultivated in the Sicilian lands of Cavanera Etnea, characterized by volcanic and mineral-rich soils, Santagostino draws its elegance and complexity from the combination of Nero d'Avola and Syrah, which benefit from the warm climate and cool sea breezes. Vine growth is favored by the alternation of warm days and cool nights, which allow for optimal grape ripening and preserve intense aromas.
Vinification: After manual harvesting, the grapes undergo temperature-controlled maceration for about two weeks, followed by fermentation in steel tanks. The wine is aged in French oak barriques for 12 months, lending complexity and depth to the aromatic profile.
