Nose: Elegant and complex, with hints of dried fruit, toasted nuts, caramel, candied orange peel, figs, and mature wood. Delicate notes of sweet spices and honey complete a refined bouquet.
Palate: Enveloping, rich, and velvety, with a perfect balance between sweetness and dryness. On the palate, notes of nuts, toffee, dates, citrus zest, and spicy nuances emerge. Long, persistent, and warm finish, with a unique elegance that reflects its 30 years of aging in a solera.

Pairings: Pairs beautifully with foie gras, braised red meats, game, pâtés, aged cheeses, and blue cheeses. Also perfect with dark chocolate and dried fruits, or to be enjoyed on its own as a meditation wine.
Terroir: The vineyards are located in the albariza soils of the Jerez area, characterized by a calcareous composition that imparts freshness and minerality. The Mediterranean climate, with hot summers and Atlantic winds, ensures optimal ripening and grapes of great aromatic intensity.
Vinification: The Palomino is dry-vinified and aged in a Palo Cortado solera for approximately 12 years. The Pedro Ximénez is sun-dried, fermented, and also aged for about 12 years in a separate solera. The two wines are then blended (87% Palomino and 13% PX) and further aged for 18 years in the historic Apóstoles solera, created in 1862 for the visit of Queen Isabella II.
Description: Apóstoles Palo Cortado VORS 30 years is an extraordinary Sherry that combines the refinement of Amontillado with the structure and warmth of Oloroso, enriched by the velvety sweetness of Pedro Ximénez. An iconic wine from the González Byass house, it represents one of the highest expressions of the Jerez tradition. Elegant and persistent, it is a great meditation wine with excellent aging potential.
