Origin: Province of Verona, Veneto, Italy

Grape Variety: A unique blend of at least 15 indigenous and international grape varieties. Among the best known are varieties such as Corvina, Rondinella, Oseleta, Croatina, Sangiovese, Cabernet Sauvignon, Merlot, and many others. This blend makes Kairos a complex wine rich in nuances.

Color: Intense ruby red with purple reflections, a sign of youth and structure.

Nose: Broad and complex, with notes of ripe red fruit such as cherries and plums, enriched by spicy hints of black pepper and cinnamon. Nuances of dark chocolate, tobacco, and licorice are also perceived, with a hint of aromatic herbs.

Palate: On the palate, it is full-bodied, structured, and enveloping, with well-integrated tannins and a balanced acidity that provides freshness. Fruit notes blend with spicy and mineral ones, creating a long and pleasant persistence. The finish is complex, with returns of fruit in spirits and chocolate.

Alcohol content: 15%

Serving temperature: 18-20°C

Pairings: Ideal with structured dishes such as red meat roasts, game, braised meats, and aged cheeses. It also pairs perfectly with first courses featuring elaborate meat or mushroom-based sauces. A meditation wine that can also be enjoyed on its own.

Terroir: The grapes come from different areas of the province of Verona, where the soil is predominantly calcareous and clayey, with a significant presence of rocky skeleton. The different altitudes and microclimates allow for grapes with varied aromatic characteristics, which blend perfectly in this blend.

Vinification: The grapes are harvested by hand and vinified separately for each variety. Fermentation takes place with indigenous yeasts and lasts about 20-30 days. After blending, the wine ages in oak barrels for a period of 24 months, followed by further bottle aging before being released to the market.

Description: The Kairos IGP is a unique and bold expression of Venetian winemaking, the result of a blend of at least 15 different grape varieties. The philosophy of the Zýmē winery is to express the territory through a blend that captures the essence of different winemaking traditions. A wine that reflects the harmony between innovation and respect for roots, with a remarkable capacity for evolution over time.
The Kairos IGP by Zýmē represents an oenological work of art, combining tradition and innovation through an unusual blend. Its name, which means "opportune moment" in Greek, reflects the producer's philosophy: to seize the perfect moment to create a wine that encapsulates the essence of time and place.

Classification: IGP (Protected Geographical Indication)

Type: Red Wine

Allergens: Contains sulfites

Awards and scores: The "Kairos IGP" by Zýmē received a score of 92 points from the magazine Falstaff, which appreciated its complexity and aromatic richness.

Philosophy: Integrated production, with a focus on sustainability and natural vineyard management.
